WHY FIVE VINEYARD

Five Vineyard like us is family run. We have actually known the Vella family who founded Five for over 20 years thanks to the local sporting club in Yarrambat.

Like us, they have strong family and community values that align with ours. This is why we chose to collaborate for the last two years producing Pinot Noir Gin and of course, their grapes and wines are delicious.

HOW TO SERVE HM 2023 PINOT NOIR GIN

Looking for ways to enjoy HM 2023 Pinot Noir Gin, here are some delicious serving suggestions for you to enjoy.

Ingredients:
60ml HM Pinot Noir Gin
30ml Fresh lemon juice
30ml St Germain Elderflower Liqueur
10ml Sugar syrup
Optional splash of soda water

Process:
1. To a mixing glass with ice add all your ingredients except the soda water.
2. Stir for 30 seconds and then strain into a chilled glass.
3. Now add a splash soda water if you like.

60ml HM Pinot Noir Gin
120ml Tonic water – we recommend Long Rays Pacific or Fever-tree Mediterranean tonic water

To a glass with ice add the gin and tonic water. Lightly stir the ingredients to combine and garnish with a lemon wedge.

Ingredients:
30ml HM Pinot Noir Gin
30ml Fresh lime juice
30ml Apricot brandy

Process:
1. To a cocktail with ice add all your ingredients and shake
2. Garnish with a lime twist

THE PROCESS

HOW HM PINOT NOIR GIN IS MADE

1. The team at Five Vineyard handpicked over 160kgs of Pinot Noir grapes to be steep on our London Dry Gin.

2. It was a team effort to remove all the grapes by hand from their stalks. There was over 150kgs of grapes processed.

3. We took our concentrated HM Rare Dry Gin at 78% ABV and soaked the pinot grapes for 8 weeks.  Everyday we stirred the tanks to extract maximum flavour and colour from the grapes.

4. We then decanted the gin from the grapes -yum!

5. The grapes were then hand pressed to extract maximum flavour and colour. The pressed juice was then added to the Pinot Noir Gin.

6. The Pinot Noir Gin was then diluted to 43% ABV, bottled and labelled ready for release.

At HM Gin we are a father daughter distillery on a mission to make everyone a gin lover.

Our passion for HM Gin comes from our shared love of producing high quality craft gins. HM Gin started as a lockdown hobby in 2020 and has since been awarded Australia’s best London Dry Gin at the World Gin Awards in 2023.

Being a father daughter duo we have a unique dynamic that helps us get the best out of each other and pushes us to achieve our mission of making everyone a gin lover.
